Ingredients
- 4 Bacon Slices ,finely chopped
- 4 egg ,large & beaten
- 1 ounce white Onion ,chopped
- 1/4 cup Monterrey Jack Cheese ,shredded
- 2 ounce poblano pepper ,chopped
- 2 tablespoon butter ,unsalted
- Pinch Chipotle Powder
- 2 tablespoon Cilantro ,finely chopped

Instructions
- To begin with, cook the bacon in a skillet over medium high heat for about 3 to 4 min or until they are browned.
- After that, stir in the onion and poblano pepper and stir fry them for 2 to 3 minutes or until they are transparent and softened.
- Next, spoon in the cilantro and the chipotle powder to this and combine them well.
- Transfer the cooked contents to a plate.
- Now, clean the skillet with a wipe and then heat the butter over medium heat until it is melted.
- Then, toss the beaten egg into this and scramble them.
- Once they are cooked, transfer the scramble eggs to two plates or casseroles.
- On to top of the eggs, stir in first the cheese and then the bacon onion mixture.
- Finally, cook them in the microwave at low setting for 2 to 3 minutes or until the butter is melted.
- Serve them hot.
Recipe Notes
It is also possible to bake them in the oven at 350 degrees Fahrenheit for the final step.
