The rich flavour of the bacon combines with egg and poblano to make this savoury and tempting breakfast fare. The crispy saltines of the bacon coalesce perfectly with the mild hotness of the peppers and fluffy scrambled eggs to make this dish mouth-watering.

Instructions
  1. To begin with, cook the bacon in a skillet over medium high heat for about 3 to 4 min or until they are browned.
  2. After that, stir in the onion and poblano pepper and stir fry them for 2 to 3 minutes or until they are transparent and softened.
  3. Next, spoon in the cilantro and the chipotle powder to this and combine them well.
  4. Transfer the cooked contents to a plate.
  5. Now, clean the skillet with a wipe and then heat the butter over medium heat until it is melted.
  6. Then, toss the beaten egg into this and scramble them.
  7. Once they are cooked, transfer the scramble eggs to two plates or casseroles.
  8. On to top of the eggs, stir in first the cheese and then the bacon onion mixture.
  9. Finally, cook them in the microwave at low setting for 2 to 3 minutes or until the butter is melted.
  10. Serve them hot.

It is also possible to bake them in the oven at 350 degrees Fahrenheit for the final step.
