Cheesy Fettuccine Pasta
Here comes a superb and simple recipe for a totally different kind of pasta fare which I guess you might have never tried before! It is crazy delicious and absolutely amazing. What’s more, it is a great alternative to regular pasta. Moreover, you have one more good option other than zoodles and cauliflower rice to control your pasta cravings.

Instructions
- To start with, melt the cheese in your microwave for one and half minute at 30% power in a 1200 watt microwave. Note: If the watts of your microwave are lower, increase the cooking time or the power.
- Allow the cheese to cool for a minute or so and then stir in the egg yolk.
- Now, fold the egg yolk into the cheese by using a spatula and then stir it well until they are properly combined and have an egg yolk yellow colour. If the cheese is becoming stringy, it means it is cooling down and therefore do the next steps fast.
- So, reheat the cheese mixture again for 10 to 15 seconds. Note: you might need to change the reheating time according to your microwave’s watts.
- Next, in order to roll out the cheese, grease the parchment paper with oil.
- Then, roll out the cheese dough until they are ¼th inch thick. Make sure to use the other parchment paper on top so as to avoid the dough from sticking to the rolling pin. Note: Make sure to not roll the cheese dough very thin since it will become hard to cook them later.
- Next slice them into strips and allow it to dry by keeping them in the refrigerator for at least 4 hours. You can understand that it is dried when it is not that shiny and is a bit firm.
- Finally, bring a pot of water to a boil over medium high heat and to this, stir in the cheese strips and cook them for 1 minute or so.
- Once cooked, drain them well and then wash it under cold running water so that they don’t stick together.
- Serve it with any sauce and reheat it before it is to be served. It takes the flavour of which ever sauce is used.
Recipe Notes
If you do not have microwave, it is also possible to melt the cheese by using a double boiler. If you like it seasoned; you can even try adding cayenne pepper or garlic powder etc. while making the dough. This fettuccine strips pairs well with blue cheese Alfredo or with just butter and salt.
