Pumpkin and Beef Saute
This distinctive pumpkin and beef saute is the perfect fare as a warming hearty meat dish on a cold winter’s night. On top, all though it has almost of all the ingredients that are typical of low carb diet such as grass fed beef, bacon etc. it still comes out with a new flavour.

  1. Start by, heating 2 tablespoon of ghee in a saucepan over medium high heat and to this, stir in the diced pumpkin. During this time, keep the beef in a bowl at room temperature.
  2. Cook the diced pumpkin until they are lightly roasted and then season it with salt and pepper.
  3. Continue cooking for another ten minutes on low heat while keeping it covered. Stir it once or twice to prevent it sticking to bottom.
  4. Now, roast the bacon strips in a frying pan until it is browned and cooked. Keep it aside.
  5. Next, toss the beef with the spices along with salt in a large sized bowl and combine them well.
  6. After that, heat about 1 tablespoon of ghee in a saucepan over medium high heat and to this, add the beef mixture and cook until they are browned while stirring it frequently.
  7. Then, spoon the crispy bacon pieces and the chopped parsley leaves into this and toss them well.
  8. Finally, stir in the sautéed pumpkin to this and combine them until they are properly mixed. Garnish it with the remaining parsley leaves.
