This simple recipe is a great way to the give the normal steak a fresh makeover. The lively and springy Italian sauce brings in serious flavour into this succulent and tender steak dish. So, enjoy the fresh, bright and pungent flavours of the Gremolata on the nicely crispy charred steak with roasted broccoli and you are sure to have a highly satisfying and gratifying meal.

Instructions
  1. Start by placing the steak at room temperature for 10 minutes or so and then wipe it off with a paper towel to remove the excess moisture.
  2. Next, marinate it with ghee, pepper and salt and keep it aside for another 5 minutes or so. Note: Make sure to apply the ghee first and then the seasonings.
  3. Now, in order to make the Gremolata, combine garlic, parsley, melted ghee and Lemon Zest along with salt and stir them well. Keep it warm and aside. Note: Since ghee is used, it may solidify at room temperature, so the need to keep it warm.
  4. After that, heat a cast iron griddle pan or a heavy based pan over high heat and to this, place the steak. Note: it is not necessary, to add any oil.
  5. Cook it for 2 to 4 minutes for each side so as to seal the juices. When the sides starts getting browned, it is time to turn it over to the other side.
  6. Lower the heat to medium and then cook it again for another 4 to 8 minutes. If you want it medium done, cook it for 7 minutes and f if you need it well done, cook for 11 minutes. Note: there is no need to flip over this time.
  7. Remove it from the heat and allow it to cool for another 5 to 10 minutes.
  8. Before it needs to be served, transfer the steak to the serving plate and top it with Gremolata and ghee.
Recipe Notes

One good way to rest the steak is to first cover it with parchment paper and then with kitchen towel. This will ensure that it remains pink and juicy.
