Ingredients
- 2 tablespoons Water
- 2 cups Rhubarb ,finely chopped
- 1/4 teaspoon Ginger
- 4 teaspoons Sweetener of your choice
- Spinach leaves , to serve
- To make the dressing:
- 5 tablespoons White Wine Vinegar
- 1/3 cup Blue Cheese
- 3 tablespoons extra-virgin Olive Oil

Instructions
- To start with, place the rhubarbs, sweetener, water and ginger in a medium saucepan and heat it over medium heat.
- Once it starts boiling, cover the saucepan and allow it to simmer for four to six minutes.
- In order to make the dressing, smash the blue cheese along with the vinegar and to this, then spoon the olive oil.
- Whisk them well until they are properly mixed.
- Finally, place the spinach leaves on to the bowl. Top it with rhubarb and then drizzle the dressing over it.
- Serve it and enjoy.
